Tips

Choose lean cuts of meat such as a beef, rump, fillet or round steak; lamb fillets, eye of loin or butterflied; chicken breast fillets; or butterflied port steaks, leg steaks or fillets. To simplify matters, look for 'Trim Lamb' and 'New Fashioned Pork'. meat is most tender when sliced across the grain (lines in the flesh). Marinating helps tenderise meat and adds additional flavour.
