Minestrone Soup with Basil Croutons



Recipe Ingredients
(serves 4)

BASIL CROUTONS:
1 small French bread stick
1/4 cup basil pesto
MINESTRONE:
1 tbsp oil
1 onion, finely chopped
2 cloves garlic, crushed
2 potatoes, diced
2 carrots, chopped
2 zucchini, diced
120 g green beans, chopped
400 g can chopped tomatoes
2 tsp MAGGI Chicken Stock Powder
2 1/2 cups water

How to Make

Basil Croutons

1. Preheat oven to 180°C.

2. Cut bread into 1cm thick diagonal slices. Spread both sides of each slice with pesto.

3. Place slices on a greased oven tray and bake 20 minutes or until crisp and golden.

Minestrone

1. Whilst the croutons are cooking, heat oil in a large saucepan. Cook onion and garlic, until onion softens, stirring occasionally.

2. Add potato, carrot, zucchini and beans and cook 3 minutes, stirring occasionally.

3. Add tomatoes, MAGGI Chicken Stock Powder and water, bring to the boil then reduce heat and simmer 20 minutes until vegetables are tender.

4. Serve Minestrone with Basil Croutons. Sprinkle with grated parmesan cheese if desired.
