Hearty Sweet Potato Salad



Recipe Ingredients
(serves 4)

1 kg sweet potato, peeled, cut into large chunks
1 1/2 tbsp MAGGI Sweet Chilli Sauce
4 green shallots, sliced
100 g baby spinach leaves
1/4 cup pepitas (pumpkin seeds)
420 g can chickpeas, rinsed and drained
lemon juice, from half a lemon
400 g NESTLÉ DIET Juicy Nectarine Yogurt
1 cup chopped fresh coriander

How to Make

1. Preheat oven to 200°C.

2. Place sweet potato onto a non-stick baking tray, drizzle with MAGGI Sweet Chilli Sauce. Bake for 40 minutes or until the sweet potato is caramelised and soft, turning once during the cooking. Allow to cool.

3. Transfer sweet potato to a large serving bowl, add the green shallots, spinach, pepitas and chickpeas. Gently toss together.

4. Whisk together lemon juice, NESTLE Diet Juicy Nectarine Yoghurt and coriander. Drizzle over the salad and serve immediately.
